Start Up Your Engines Sunday

It’s going to be a long week…
Spending 8 hours in a classroom for five days straight and having night classes is going to make me insane this week. I can barely get through a 3 hour class let alone sitting in the same classroom for 8 hours.
How did I do this in high school?

So, everyone start your engines because tomorrow is Monday!!!
Start of a full week. Yayyy.

I’m not sarcastic at all ;-)

Today, I’m going to be making this with a few banana cookies…
But I can’t seem to find the right recipe.
Of course I want healthy ones, but I’m looking for energy/fitness-y ones too.
I found these so maybe I’ll go with them!
(PS. I only have two bananas haha)

Okay, so since everyone wanted to know my pancake recipe…

Bob’s Modified Pancake Recipe

  • 2/3 Cup Bob’s Red Mill Buttermilk Pancake & Waffle Mix
  • 1 egg white*
  • 2 TBsp Unsweetened Applesauce
  • 1/2 cup Buttermilk (Milk + 1-2 tsp vinegar)
  • 1 TBsp Cinnamon (optional)

First, make the buttermilk so it has time to sit and get buttermiky. Then, add the wet ingredients + cinnamon. Stir until frothy. Add pancake mix until JUST combined. Cook over medium heat and add any toppings you like! (I used carob +  pb chips :-) )

Note: I never use egg beaters for pancakes because I think the thickness of an actual egg white makes a huge difference with the final pancake.

  1. Bleh for your knee and missing the Eagles game. Good luck with next week, it sounds like you’ll be so busy you’ll hardly be able to realize how tough it is… that’s how it was for me most of the time in college.
